I was intrigued,
foliage looked like dandilion (Taraxacum) buds definetely not Asparagus, rather like Asteraceae,

I searched for taraxacum-like vegie and found a recepie.

My educated guess,

sprouts of Cichorium intybus, cultivated in Italy.
