Baking, anyone?

I have to say my favorite area of cooking has to be baking. There's something awesome about watching gooey mixes or blobs of dough transform into amazing mouth-watering goodies. My oven caught fire a few weeks ago, fracturing the bottom element, and I've been running around since, trying to find a new replacement. After 2 that ended up not fitting, I think I've finally located one that works, and I'm going to celebrate by making something really good. I find a lot of my recipes online, and I know lots of you enjoy your time in the kitchen.

What recommendations do you have? Whether it's something simple, or something incredibly tricky...a desert or a main course, I want to hear about your tried and true recipes for the oven. :)

Muffins. This winter is all about muffins. Don't know why, it just is. Never been interested in muffins before. Now I am. My favorite so far:

Fig muffins

Persimmon muffins, but I think persimmons are out of season already. Up until a month ago, I had never tried one of these. For some reason they gave me the impression they probably looked better than they would actually taste. I was wrong. Wonderful little fruits.

That brings back a lot of memories.
The small town, that I spent most of my childhood in, had several persimmon trees.
They were very old, huge and neglected.
I don't think that anyone else ever bothered with 'em.
It was just Grandma, the birds and me doing the picking!

For my grandma, it was a major harvest time!:~)
I loved it! I had to help her crawl through the barbed wire fences, climb the trees and haul it all back to her house.
Her house smelled of persimmon muffins, persimmon bread and preserves all winter! :~)

I used to bake all the time, until I found out that I was glutin and sugar intolerant, etc.
I've found a lot of substitutes, but sometimes it's just not the same.
Plus...
I really like the weight that I lost when I cut all of that out of my diet.;~)

I just bought a bunch of persimmon trees and am lookin' forward to a future harvest.
They are a mixture of regular ones and the crunchy Japanese ones.
I better start thinking about where there going to go.

Kev - this winter has totally been about muffins. I made some interesting butternut squash muffins from a jamie oliver recipe a while back and they were amazing. I used my new element today to make some banana blueberry muffins...they're cooling right now as I type.

Persimmons are pretty awesome actually although I find different types have different textures. Scott - sounds like some experience with grandma! :D If she left you any recipes and they're not top secret, feel free to share!

As for the weight thing..some people eat so they can go to the gym, and other people go to the gym so they can eat. Guess what type I am :P
