Happy Xmas everyone!

I was a baking fool yesterday, three pumkin pies (was only supposed to be two but my friend Tommy insisted on three so he'd have leftovers). And a double batch of what I'm calling my 'redemtion gingerbread'. Last year I used an unfamiliar oven and though the gingerbread had good flavour, the texture was way off. This year's batch looks perfect (yay, redemtion!).

Today I'm making apple dumplings, grandma's recipe and the best apple dessert I've ever tasted, then off to feast on goose and turkey.

I haven't been on to wish you a merry xmas. I am so truly exhausted from all the cooking and baking and can't even see straight.

I hope you and everyone here had a wonderful holiday and best wishes to all for a happy and healthy new year!

The good thing about getting on in years is no one expects you to cook holiday dinners anymore. After cooking over 40 tears of Christmas (and Thanksgiving) dinners, this year I just brought a pecan pie (store-bought) to Jim's niece's house and then sat down and stuffed myself. I was very merry.
