Sow(ed) seeds, BUT!

About, I would say, a week ago I planted my seeds- tomatoes, Jalapenos, Kale, Cilantro, and TYEE F1 Spinach. And they've probably only had about three days worth of [worthy] sunlight do to the weather; it's 48dgrees now. (Take Note: The weather here is bipolar!) I just now put them in my greenhouse, it's roughly maybe sixty in there, anyhow, before today I've just left them inside of, my table and when I get home- if it's nice outside- I'll lay them above my car for sunlight and heat; but like I mention before the weather here is crazy, and I've found no real way to mitigate this. Finally, I planted my seeds in PeatMoss pods, and there's fuzz growing in the pods, which I presume is mold.. How do I prevent this? Are my seeds ruined? Could I still eat the harvest later on? Is there anyway to stop the growth?

It would suck if I had to replant them all, respectfully.

FYI: My kale seeds have already sprouted.
