| I assume you are talking about Burpee's 'Ruby Queen' -- it is one of my favorite sweet corns, because of the color. Your corn just isn't mature enough to have red/burgundy kernels. It is white to pale when very young, you can eat it at this stage, but it will continue to develop better flavor and color over the next 3-10 days (depending upon the temperature and weather). I like to leave mine until fairly old for best flavor. At this point, the kernels will be a solid burgandy color, as the photos in the catalog and on the seed packet depict. The above advise would apply to other colored corn varieties as well -- they all start out pale and get better color as they age. |
