Sweet Red Corn

This is the first year we have had the room to plant a good amout of corn (room for aprox 128 stalks). I had found a new variety of sweet corn (RED). Has anyone had any experience with this variety yet? I was VERY excited about it. I thought it would be so cool. I also planted sweet yellow corn since the seed package suggested it for good pollination. Now for the disappointment...the silks on the red corn are drying, signaling time to harvest, but the curnals are bareling even pink...not a bit of red....was it something I did? Or if I leave them on the stalks a bit longer will they turn darker?

I assume you are talking about Burpee's 'Ruby Queen' -- it is one of my favorite sweet corns, because of the color.

Your corn just isn't mature enough to have red/burgundy kernels.

It is white to pale when very young, you can eat it at this stage, but it will continue to develop better flavor and color over the next 3-10 days (depending upon the temperature and weather). I like to leave mine until fairly old for best flavor. At this point, the kernels will be a solid burgandy color, as the photos in the catalog and on the seed packet depict.

The above advise would apply to other colored corn varieties as well -- they all start out pale and get better color as they age.

the red color fades during boiling, even though Burpee's catalog says it doesn't. Still, it is just delicious.
