We are having roast duck on a bed of fresh sauerkraut. For the first time in my memory the local grocery had fresh duck on sale. When a duck roasts in a bed of kraut the kraut is delicious. Shouldn't and won't eat a lot of it but a once in 10 year treat. The duck is stuffed with onions. First time I ever ate it was about 60 years ago at George's folks. I had never eaten duck or goose like they did.

That sounds good. What with the weather you've had in Nebraska, you need the extra insulation the duck fat will give you. Enjoy.

Leone, I think we have lived long enough that a bit of "unhealthy" duck-fat doesn't make all that much difference, it sounds delicious, enjoy!
