The globe thistles I planted in mid-April in full sun (shaded about an hour by day lily leaves) appear healthy - when are they supposed to bloom?

In your zone, they should be blooming now. Sometimes when I plant new plants, they are a little unpredictable the first season because they are getting established.

Mine used to come into full bloom right about now, although it would start to bud by mid to late June.

Here in my Zone 6 garden, they have been blooming for over a week now;
you are aware, I hope, that if you don't deadhead that lovely blue globe when
it's finished blooming, you'll almost surely end up with plenty of seedlings
next season !
