I'm planning my garden for this Spring. I only have room for one night bloomer and would like something that is a prolific bloomer ...any suggestions or your favorite.

Some you could set your heart on, for looks but are tetchy about making tubers to Winter over... Others do more reliably tuber and you might remember them a lot better than others... Wood's White Knight, Red Cup, Jennifer Rebecca and several un named varieties have year by year have proven themselves to do better on most counts Then there are all those others you want to try, next year...

Night bloom tropical waterlilies do thrive in warmer water, 80's and nineties waters they do like. If your Summers are cooler and milder they might disappoint. They are well suited alternative for ponds where water hyacinth are a problem, helping to shade and moderate waters from excessive heat and sun, coping well with temperatures that would scorch many a fickle day bloom tropical waterlily. Night bloom tropical waterlilies are very easy to find in season listed for $10 or so on ebay by any of many special interest collectors.
