I am looking for something to grow indoors, submerged in water, but with the roots exposed so you can see them, rather than in a pot underwater. I was thinking of Colocasia Escuelenta or a variety of Papyrus, but the instructions I found for both said to submerge it in a pot with dirt in it. Any suggestions? And please forgive my n00bness when it comes to aquatic plants. I am new to this.

Try the Colocasia but pot it with only half of the roots in the pot and half hanging out over the side of the pot.
If you feed it with fish emulsion I bet it would grow without any soil. Reason why is at the moment I have a couple of large plastic buckets outside with some water lilies and a Sagittaria lanceolata just in water and they have done all right without any soil at all over at least a 6 month period.

Why not peace lily or aglaonema?
