Storing nymphaea roots

Just cleaned out my 7x9' frog pond for the first time since building it a few years ago. Too much organic material was making the bottom (ca. 18" deep) anoxic, killing frogs and tadpoles over the winter.

Water lilies had completely outgrown their pots; tubers more than 2" diameter and a couple of feet long all over the place. I removed most of the overgrowth and pulled out loose debris, leaves, etc. Hate to throw out all those healthy roots, and would like to re-use them somehow.

Current plan: buy plastic laundry tubs, and grow them that way, out on the patio. In winter, just park the "ponds" in the cellar. Any reason why that wouldn't work?

Also, I'd like to store some of the roots to donate to the spring plant sales. Advice on the Web is all over the place: airtight bag, damp sand, under water, etc. These are pond pants. So shouldn't the roots be OK in a tub of water in the cellar?
