pruning roses

I have been thinking I should probably prune my rose bushes. I did a little research and read that I should wait until the plant is dormant. I don't think that here in San Diego my roses ever stop blooming. Then I read a tip that I should trick it into dormancy by stripping all of its leaves. I'm afraid to do that. Does it really work or will it ruin my rose bushes? Should I be pruning my bushes now, and if so, what are some things I should keep in mind as I prune?

I'm not in your zone but I do believe for warmer climates like yours this is the time to prune. I don't think the roses have to be dormant to do that. I hope someone from your zone will chime in with more info.
