Roses think it is Spring

We had a very mild December here in North Texas, and the forecast is for highs in the 60's for the next week or so. Many roses are budding out, but our traditional pruning time here is around Valentine's Day.

I'm fairly confident that we'll have another freeze before Spring, but we never know.

It's just so tempting to get out there in 65 degree weather and start cutting. Is it worse to prune too early and get a freeze or too late and have to cut off all that new growth?

I planted roses for the first time last year, so this will be my first pruning.
