Just pinch off and deadhead the flower. Cutting further down the cane is not required.

Then empower yourself and get a good beginners book on growing roses such as 'Roses for Dummies'. There are better books, but that will at least cover the basics.

Pinching is fine for climbers, but if those "5 regular bushes" are Hybrid Teas, you need to be a bit more discriminating in how you dead-head. Cutting down to a five-leaflet leaf is the first requirement, where on the stem to pick that leaf is a product of the age, health, and vigor of the bush.

Also don't stress. You live and you learn. In the coming years you will slowly acquire the knowledge you need and roses are pretty forgiving, I find.
