1.) Can someone please help my identify what is in the included images? They smell great, though I have no idea what they are.

2.) Does the same concept of deadheading apply to these? Where should I try to cut them?

Looks like a gardenia with chlorotic foliage from the soil being too alkaline. Give fertilizer for acid-loving plants.

Yup, Gardenia veitchii. Dead heading won't provide any real benefit other than to make the plant look more groomed. Don't touch the flowers with your hands. Skin oils darken them, making them fail faster. Kim
