Hi, just got some Spagnum Peat Moss and Pearlite for seed starting. I didn't see anything about a ratio for the seed starting products.

2 parts peat to 1 part perlite is the standard mix. Commercial mixes also have a small bit of lime added to neutralize the pH.

Remember that you will have to pre-soak it well to get it wet before planting the seeds because peat repels water easily. A good 24 hour soak in warm water and then wring it out when filling the containers.

Hi, could anyone give a ballpark estimate on how much lime to add?

I would not add the lime if it was me. What I have done is use moisture control Miracle Grow and add 1/2 of 1 part of Pearlite to it and it works wonderfully for me.
