Snapdragons for fall

I grow many,many plants from seed for my yard and to sell at farmers market but there are still some things I have little or no luck with....snaps being one of those that I have hit and miss luck....mostly miss...at growing from seed. A few weeks ago I purchased seeds for variegated variety on sale(YAY,I love sales!). I'd like to get them started for my fall/winter gardens but in my hot and humid zone 8 it's gonna be tough.

Anyone in my zone or simular zone have some words of wisdom for me?I've had them stored in the frig in a zip lock baggie and thinking about sewing them now and keeping them refrigerated until about mid-Sept.when our weather will hopefully be cooler but I'm afraid they won't have time to germinate and grow big enough to bloom in my fall/early winter gardens.
