Growing Seeds in Gel

Recently I heard about the possibility of starting seeds in gel. I like this idea for two reasons:

1.) You can see the roots growing in the gel, which has a coolness factor.

2.) I've been trying to start the seeds of some Native Shrubs. The seeds require stratification in my fridge. I really don't like keeping dirt in my fridge.

a.) Anyone tried this? Does it work?

b.) Which would be less likely to rot, jello (easiest option) agar, or that Water Gel used for cut flowers?
