Seeds Stop Growing After Germination

I planted two flats of seeds of several kinds of vegetables -- lettuces, chard, onions and some brassicas-- in a greenhouse. They germinated successfully but completely stopped growing after germination. a few plants had very small true leaves starting to form but haven't grown a bit in nearly a month.

Some issues that I suspect might be the cause of the problem: The greenhouse gets hot, over 100 F on some days. Panels open on the top of the greenhouse and the doors open, but there is no fan. The first time we had this problem we let the flats sit in a tray of water to absorb water from below. We are watering from below again but this time taking the trays out of the water once they have wicked the water up after a few minutes. These plants just germinated a week ago but I'm worries they might be stuck at the same stage of development as the last batch.

Any ideas why these plants stop growing after they germinate?
