Apple seeds already sprouting in fridge, what to do?

I'm growing apple seedlings to plant around my family's land for wildlife habitat, using seed from whatever apple varieties I peel and core for pies, crisps, etc. Braeburn, Honeycrisp, Sweet 16, etc. Not too worried if they replicate their parent's fruit quality, so long as they produce heavily for the deer and squirrels.

However, 10 of the 50 seeds I threw in the fridge last month to stratify are already sprouting small roots. I could still plant them in the garden in a raised bed, or I could plant them in pots and keep them in the mother-in-law addition above our garage with my other houseplants. They'll get plenty of southern exposure sun BUT be kept in the 50-55F range all winter (it's only used for storage so we turn the temp down up there to save energy).

Which option would be better in this case? Thanks!
