Viburnum, potbound w/exposed roots

Hi! This is a repost from Georgia Gardener, so I can post pics. I'm new to Garden Web, live in Atlanta, and just rescued three half-price viburnums ("Mohawk") from Pike's this past week. Two look okay, though one has rust spots on a couple of its leaves. The third was sitting in a broken pot, completely dried out. They were still being watered, but no one checked the pot so all the water drained away. My question: At the soil level on all three viburnums, the roots were showing in a tangle above the soil. My husband says it's because they were coming to the surface for water and that they should be covered. I'm not sure if a viburnum should be planted deeper than it was growing. Should I cover the roots or not? I know these shrubs are very hardy because I had a beautiful judii at my old house that survived everything. Still, I don't want to kill them.
