Need replacement for Yews

We had a wonderful "grotto" formed by some large yews. Unfortunately they grew too big, and the shade and the deer caused the undergrowth to die back to where only the tops are growing, the underneath is bare and sparse.

They are going to get taken out shortly as they are 70 years old and won't survive cutting down to stumps to restart.

I like yews, but the deer eat them aggressively. Boxwood's grow too slow and don't grow tall enough. (we want about 10-12' tall)

What can I plant that can take full sun on top and south side, will grow reasonably quickly, be dense, and will either stop at 10' or take to shearing well...

The X's were Yew, the Z was a quiet shady spot on the grass (.)

D was a Dragon Sculpture sticking out of the bushes

The Dragon's armature used to be hidden in the Yews, but the deer have eaten all the growth up to about 4', so you can see through the bushes now...

What should I replant to hid the dragon's "legs" that won't take forever to grow in?
