Deadheading viburnums

I have a Burkwood Viburnum that blooms profusely and a Blackhaw that is not yet mature enough to bloom. Question: Websites selling these plants brag about the beautiful fruits attracting birdlife, but in the next breath they say to deadhead right away to get more blooms the next year. You can't have it both ways, right!?! Is there anything wrong with letting the fruit cycle through? Is there any reason I might be sorry for not deadheading and letting the fruit develop? I would especially like to let the fruit develop on the Blackhaw when it matures. Why am I afraid to stop deadheading!!!!!!
