Bunnies and Sand Cherry

I bought a sand cherry that is about 2.5 feet high. There are a lot of bunnies here this year -- one is partial to my garden. I noticed that the sand cherry's lower branches were cut clean off -- i couldn't figure it out. Now I am noticing gnaw marks on the branches, so it has got to be him, but he is not eating what he is pruning. What to do? other than letting the dog have him.

My first sand cherry -- if i take these lower branches all the way down, what is left to them (about 3 inches), will i get new shoots as it grows?
