Broken Minuet Laurel

I have three minuet laurel shrubs that were damaged when heavy snow fell from the roof two winters ago. The centers were broken out of each plant. Two have small amounts of regrowth in the center, but the third has none. They are healthy otherwise and have an abundance of beautiful buds on them right now. I am wondering how far back I can safely cut them back to encourage full growth or whether they will never regrow evenly. They do put out plenty of new growth on the areas that were not affected by the snow. Any ideas?
