yew hedge trimming question

I have a tall yew hedge along the entire length of my property. There are at least 150 in a row. They're about 8 ft tall in most places, and getting taller. I had let it grow to a more natural looking hedge by hand pruning for the past 5 yrs. I was thinking of going back to shearing it, but the front of my yard is about 3 ft higher than the back. I don't know what line to follow for the top. Should I make a perfectly horizontal line to follow? That would make the back hedge much taller than the front. Or should I make them all the same height, which would make the hedge go uphill?
