Good Forage and Green Manure/High Biomass

I run a small farm animal sanctuary and am looking to improve the property's poor soil. I haven't done a soil test yet, but we hardly have more than 3-6 inches of soil on top of substrate.

I'm looking for a good mix of plants that will:

1)Break up the soil

2)Harvest minerals from subsurface

3)Produce A LOT of biomass

4)Produce non-toxic forage for one mini-horse, 3 sheep, and 3 goats.

Lord! you've waited a long time for answers! I'll suggest clover, red or white. It will to all the things you want.

clover is great make sure to look for the correct diet for the animals. but winter rye is my best bet it grows all winter in MD.
