Making compost for seed flats

Looking for advice on how to make compost for seed flats, or adapt the compost that I make. I normally work with 1/3 compost, 1/3 peat moss and 1/3 perlite in seed flats and have been buying bagged compost for this. Most of the compost I make is fish offal and wood chips, and I get 4-5 pallet bins a year.
I'm primarily concerned about weed seeds (Yes, I know there shouldn't be any weed seeds in fish offal and woodchips, but still.) and any nutrient imbalances in the compost that I make. Oven-baking compost to rid of weed seeds is not an option for me, although if someone's had good success in an outdoor barbecue, I'd love to hear about it.
Overall, I use 10-15 gals of compost annually for seed flats.

When I use the compost I make for starting seeds I will screen it with 1/4 inch mesh hardware cloth. Never had a prtoblem with "weeds" germinating in my compost so I have done nothing to prevent that. Pouring boiling water over the mix might help, but any heating of finished compost may well kill off the bacteria that you would want to have in that compost.
