Paver edger course set in concrete or with adhesive?

I am contemplating a paver walkway and patio in my yard, and am in the process of getting estimates. I want to make sure that when I spend this kind of money, I get the best job!

Both companies I like will pour a concrete foundation, and set the pavers on top of it. One will set the edger course of the pavers in concrete; the other will attach them with adhesive (after I told them I didn't want the concrete applied to the side to hold them in.... it always shows in the garden beds that way, I think...)

Does anyone have any experience or advice as to which method is better, or that it won't make a difference?
