Building a visible aggregrate walkway

I am appaled at the price to have a contractor pour a peastone concrete walkway, I live some distance from any Urban centre.
Being a stereotypical DYI I want to attempt this project myself. I have found the magic ingredient which is a chemical sprayed in the poured concrete to slow the top 1" so that the concrete can be washed away leaving the exposed aggregrate.
I am looking for some detail on the finishing process so that I have no pealing, flaking and cracking. Also how do I finish the exposed sides that will be in the forms.
