Bluestone pathway questions

I'm laying a bluestone pathway with grass in between the stones. My stones are 18 x 18 and I laid them down with 7 inches between each stone. Therefore the distance between the center of each stone is about 2 feet. Is this a good distance for the stride of an average person? For me it seems a little tight but I won't be the only one walking on it.

Also, should I bring the dirt level up to the top of the stone and should I bring it about a 1/2 inch below to compensate for the growth of the grass?

The average stride length is between 2 and 3 feet, so 2 would be on the short end. Maybe a 10" gap? (I laid it out in my backyard and it doesn't look too bad)

Last summer I repaired a natural stone walkway my Great Grandfather made about 85 years ago and I made everything level (no grass between the stone, but on the sides.) You will need to keep up on it or the grass will grow over the stone. I thought the walkway was about 1' wide before last summer, turns out it was almost 3' wide.

I was able to increase the distance to 9 inches by taking 2 stones out. I guess this will have to do.
