Patio grading

I am having a contractor build a patio for us (14'x12').
Till now he has put the edge stones and caps on top as shown in the 2 pictures. Since our yard is sloping, there is some natural grading. He tried to level it and give some grade for drainage. I calculated the grade and it seems like it is 1 5/8 inches for 5 feet which is about 2.6%. Is this okay? Based on my searches, it seems like people are suggesting anywhere from 1/8th -1/4th of an inch for every foot. I am a little concerned with the current grade because I do not want my patio look like it is not level and also not feel like I am going to fall when I sit on it. I asked the guy about this and he said it will be okay and that he cannot dig further because there are stones in the ground. Any suggestions?
Also, he is not going to cement those "retaining wall" stones. He said he will just glue the caps on the retaining stones and nothing will move. Is that right?
