stepping stones

I'm having some grey steping stones installed and I've been told that the colour will become yellower over time because of some organic component in the stones.

It's been explained to me twice, but I've never seen this mentioned anywhere else and I'm not sure what that I fully understand it, is there anyone that can clarify this?

if it is like a Chilton Rustic lightbodied stone, we treat it like a limestone. it can be stained yellow quite easily if hard water is present (ie. high iron content makes it look rusty)

this is the only thing I can think of happening to this stone.
