help with mice in greenhouse

Hello, I have volunteered to help our local preschool begin a seed-starting program with accompanying curriculum this spring. We will soon start planting large quantities of veggies, flowers and herbs in preparation for our spring fundraiser. We're very lucky to have an enormous, heated, vented greenhouse to grow in that has been very underutilized.

However, I am quickly discovering that we have a big mouse problem...not that the mice are big - there's just a lot of them. They already snipped off some early buds on spring bulbs that we had brought into force. I anticipate we will lost a lot of our seedlings if we don't, ahem, nip this problem in the bud.

Any suggestions for getting rid of them? We are a totally organic property and children pass through the greenhouse each day, so we're not looking for toxic remedies.
