Can I remove lawn mound around trees?

We have three trees where the lawn is higher around the trunks of the trees than the rest of the yard. One of the trees is a maple and I think the other two are ash. With the maple and one of the ash the lawn around the tree is about 6" higher, but around the other ash it's like 10". I saw a post about when there is dirt piled up, but I couldn't tell how much, or if it's different when it's not just dirt, but established lawn.

I would like to dig out the grass and dirt, remove the soil and make it more or less level with the rest of the lawn. Actually, I'd like to dig down a little further down (2 inches?) and add edging and mulch around the tree (following proper guidelines).

Is that going to hurt the trees? If I do it a little at a time, would that be better? Like, use a sod cutter, remove some of the soil and then put the sod back on this year, then do the rest next year?

I know my level of ignorance is tiresome. It is to me, too. :-) Thanks in advance for your advice.
