extensive pruning on young crabapples

About three weeks ago I planted a snowdrift and prairefire crabapple tree. They are about 6 feet tall. I transplanted them immediately after purchase. About three days later a deer ate all of the branches except the main leaders on both trees. I was forced to prune off all the branches leaving only the main leader on both trees. It's been a couple of weeks and the leaves are still healthy on the main leaders but it's throwing off shoots from the ground above the root ball. I know this is a sign of an unhealthy/stressed tree. My question is are these trees gonna survive? I have since protected the trees from deer.
