extensive pruning on crabapple trees

Three weeks ago I purchased a snowdrift and prairie fire crabapple tree. I transplanted them into my yard and three days later a deer ate every branch on both crabapples except the main leader. I was forced to cut every branch off these 6 foot trees except the main leader as all the branches were ate nearly to the trunk. The main leaders have leaves and new buds on them. It's been two weeks and the leaves are still alive. It is however throwing sprouts from the ground at the root ball. I know this is a sign of stress/bad health of a tree. My question is whether it will survive extensive pruning such as this. I have since deer proofed the trees.
