Convert entire sprinkler zone to hose bib

I have an entire sprinkler zone that is currently watering an area that will be re-landscaped. There won't be any need for the zone after the area is reconfigured. My desire is to convert the zone into a hose bib that's constantly connected to a soaker hose for daily watering of a raised vegetable garden that will soon be in place nearby.

Questions:

How is this done? I've talked to a sprinkler company during unrelated maintenance to the system and was told it's pretty easy to do. I'm handy and would like to do the job myself but I don't know enough (yet) about sprinkler systems to start reconfiguring it without doing my homework first.

Are there other solutions that would accomplish the same thing? If a hose bib were installed as described above, could it be made operable for other uses? I assume I'd have to then manually start flow to the zone for an extended period of time while using the valve at the bib to turn flow on/off.
