Does a chart exist for when to WS which seeds?

I didn't WS last year, but two years ago I had some strange things happen.

Pepper plants sprouted, then stopped growing when I transplanted. They stayed the same size the whole season.

Pole beans rotted. Eggplant never sprouted.

A bunch of perennials died when I transplanted. Maybe I transplanted too early?

Tomatoes did amazingly well.

I WS'd everything in January. Maybe I should have waited on some things?

WSing was my first time really gardening, so I'm not all that familiar with which veggies are tender and which aren't. TIA!

No need to WS everything in January - remember, winter isn't over until March. Beans, for instance, probably should not be sown until March or so - they will rot if in wet soil for too long. Peppers won't do much until the weather gets a bit warmer; that said, two years ago was a miserable pepper year for me too.

Other than tomatoes and peppers, I can't offer too much advice on veggies. It's only in the last year that I've branched out into growing more vegetables; last year I had a bumper crop of mini-eggplants. This year, I'll try some more - just don't know which yet.

None of the veggies you listed need cold stratification. Pvick is right about the beans. They will rot if left in cold wet ground.

Take a look at Tom Clothier's germination database. Use it as a guideline for when you need to sow things. If something says three months at 40 degrees followed by two weeks at 68 degrees, that tells me I should sow it very early in the WS season. If something says 10-14 days at 75 degrees, sow it later, on into spring.

A chart that gives you dates on when to sow is less effective because seeds don't know if it's February or June. They do know if weather conditions are right for them to germinate. Tom Clothier's is a great tool for helping you decide for yourself when things should be sown.
