Noob alert - How do I know what can be sown?

I'll be winter sowing for the first time! I've been collecting plastic jugs, reading the how-to's, etc. I don't want to go crazy with it my first year - just want to sow some of my favorite perennials that I want more of for next year.

Here's the part I'm confused about. Can you get seeds from ANY flower? Once the flower expires, is what's behind the seed, or is that just the dried out petal part? Or does it depend on the flower? I have many that I'd like to harvest for sowing, but I don't know if I'm just gathering dried petals or what. Here's a list.


Hostas
geraniums
Mums
Gaillardia x grandiflora - Arizona Sun
Gaillardia grandiflora - Red carpet flowers
Butterfly Bush - Nanho Purple
Rudbeckia hirta - Native coneflower
Heliopsis - Tuscan Sun
Dianthus sugar plum
Aquilegia vulgaris - Columbine winky red & white

I found info on these and am pretty sure they can be winter-sown - right?

Asclepias tuberosa - Butterfly weed (LOVE these!)
